Recipe Thursday-Grilled Sweet Potatoes

Posted on August 19th, 2010 | Posted in Recipes, Side Dish

I love sweet potatoes and I love grilling so I went ahead and combined the two- grilled sweet potatoes. They did not disappoint my expectations!!  The flavor that the grill gives to all vegetables is so unique and appealing to my personal palate.  This was a fairly simple recipe, however the first step of boiling the potatoes did take longer than I expected…though it was well worth the wait!  I served these fries as a side to grilled Hippey Hot Dogs and fresh watermelon from a local roadside produce stand.

Grilled Sweet Potatoes

Serves 4

3 sweet potatoes, unpeeled
Kosher salt (CQS030)
2 teaspoons finely grated lime zest
Pinch of cayenne pepper (CQC017)
1/4 cup canola oil (992013)
Ground pepper (CQP065)
1/4 cup finely chopped fresh cilantro

Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Slice each potato lengthwise into eighths.

Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix 1 teaspoon salt, the lime zest and cayenne in a small bowl.

Brush the potato wedges with the oil and season with salt and pepper. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter; immediately season with the salt mixture and sprinkle with cilantro.
