Recipe Thursday-BLT Sandwich

With the weather warming up I was in the mood for a light fresh sandwich, hence the BLT! I had purchased Groff Meat’s dry cured bacon from Hometown Provisions and was able to put it to good use in this sandwich. This bacon is thicker than the everyday breakfast bacon and added nice substance to this simple sandwich.  Thankfully I have a little bacon left over so I can make myself another one!! Happy Spring!

Bacon, Lettuce and Tomato Sandwich

Serves 1


2-3 slices dry cured bacon, Groff (GRF404)
fresh tomatoes (I used campari)
fresh lettuce (I used romiane)
2 tablespoons mayo Hellmans (992170)
2 slices honey wheat bread (991737)



For me the trick to making a tasty BLT is fresh ingredients and nicely toasted bread. Therefore, I’d prep all the ingredients before toasting the bread. Begin with cooking the bacon in a medium saucepan over medium heat until slightly crispy. While the bacon cooks slice the tomatoes and cut the lettuce into nice leaf size pieces that fits over most of the sandwich. Drain the bacon of excess fat, by placing on a paper towel. Once the bacon is cooked toast the bread. Spread mayonnaise on freshly toasted bread, layer bacon, lettuce and tomato and enjoy!
