I’m a strong believer that butter makes almost anything taste better. However we do need to use moderation when cooking with or using butter. There is such a thing as too much of a good thing. Aside from eating butter we all get to marvel at the annual butter sculpture that is presented at the Farm Show. Also another interesting tidbit about butter is that there is a movie coming out this year called Butter! It’s a comedy about a girl who discoveries her talent for butter carving. I’m intrigued. Please enjoy the varieties of butter that we have to offer. We also sell butter blends and margarines if you are interested in a butter alternative.

Recipe Thursday-Peanut Butter Eggs

Every Easter season I have a few activities that I look forward to-dying eggs with my family and friends and making Peanut Butter Eggs! Ever since I was little my mother and neighbor would get together to make Peanut Butter and Coconut Eggs and chocolate candy molds. This tradition is something that I treasure and take with me where ever I go, whether it’s Easter in Italy or California, these treats will be made and enjoyed! This recipe is super simple and I like it that way. I’ve tried different peanut butter egg recipes that have additional ingredients or cooking steps and they just don’t compare to this recipe. Hopefully you’ll agree with me. Also these eggs make a great hostess gift too!

Peanut Butter Eggs

Peanut Butter Eggs-2 (1 of 1)

Yield 4 Dozen

Ingredients

1 pound salted butter (880025)
1 pound (2 cups) peanut butter (991611)
1 tablespoon vanilla (NFC1055)
2 pounds powdered sugar (991841)
2 pounds semi sweet chocolate chips** (NCC1411)
1/4 cup vegetable oil (992065)
pan liners (BD3061)

METHOD
In a large bowl mix together softened butter, peanut butter and vanilla and then add powdered sugar. Line containers that have lids. Shape mixture into eggs and refrigerate until eggs are firm. Melt chocolate for dipping. I prefer using a double boiler rather than the microwave. I heat the chips (2 cups per batch) over low heat until they are half way melted and then I add about 1 1/2 teaspoons of vegetable oil and stir. Coat the eggs in chocolate and place back into paper lined containers. Refrigerate and enjoy! **Any type of chocolate can be used, but I prefer semi-sweet.
