Where did all the toothpicks go? When I was younger you could always find toothpicks at the host stand or cash register. Well, I think it’s time that restaurants stock these itty bitty wood picks again. There are multiple uses for them. they can serve to clean your teeth usually after a meal, freshen your breath (mint flavored), for picking up small appetizers (like cheese cubes or olives), as a cocktail stick or the larger ones can keep your sandwiches together.

Recipe Thursday-Carrot Cake Whoopie Cookies

Carrot Cake was definitely a flavor that had to grow on me as my taste buds matured. I am now a fan of it and personally believe that a dessert can do no wrong when cream cheese icing is included. These Carrot Cake Whoopie Cookies gourmet up the traditional recipe just a tad. This recipe calls for crystallized ginger in the cookie and honey laced throughout the cream cheese icing, to sweeten it up just perfectly. These minor additions make this recipe stand out versus the competition. Definitely worthy of a special occasion!

Carrot Cake Whoopie Cookies

Yield 18-24 Sandwiches


2 sticks unsalted butter , softened (880000)
1 cup light brown sugar (NSU2150)
1 cup granulated sugar (991842)
2 eggs (EGG011)
¾ teaspoon vanilla extract (NFC1055)
2 cups all purpose flour (991867)
1 teaspoon baking soda (991858)
1 teaspoon baking powder (NOT1030)
¼ teaspoon salt (991861)
1 teaspoon ground cinnamon (CQC065)
½ teaspoon freshly grated nutmeg (CQN062)
½ tablespoon crystallized ginger, finely chopped
2 cups old-fashioned oats (991717)
1½ cups of peeled and grated carrots (from about 2 to 3 medium carrots)
1 cup raisins, soaked in warm water for 10 minutes and drained (NRA1010)

Cream Cheese Icing

2 sticks unsalted butter, softened (880000)
1¼ cups powdered sugar (991841)
2 tablespoons honey (991621)
12 ounces cream cheese, cut into pieces, softened (776002)

Note: Cookie recipe needs to be refrigerated at least 6 hours if not overnight, before baking.


Make the cookies: In the bowl of a standing mixer, beat together the butter with the brown sugar and granulated sugar until lightened, about 3 minutes. Slowly add the eggs one at a time, beating the yolk of the first egg until it’s incorporated before adding the second egg. Stir in the vanilla.

In a medium bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg and ginger. Slowly mix the dry ingredients into the wet, then gently stir in the oats, carrots and raisins. Wrap the dough in plastic wrap and refrigerate for at least six hours or up to overnight.

Preheat the oven to 325°. Scoop rounded tablespoons of the dough onto a parchment-lined sheet pan and bake for 10 to 12 minutes until lightly browned and set. Remove from the oven and set the cookies aside to cool.

Make the icing: In the bowl of a standing mixer, beat together the butter and sugar until light and fluffy, about 3 minutes. Slowly beat in the honey and cream cheese until incorporated. Spoon the frosting into a piping bag (or fashion one out of a plastic bag and cut a hole in the corner) and pipe the frosting onto half of the cookies; place the other cookies on top to create sandwiches. Serve immediately or store the cookies and frosting separately for up to 3 days.
