Recipe Thursday-Cheesy Veggie Quesadilla Triangles

I have had vegetarian burgers in my freezer for too long so I wanted to do something creative with them. I came across this Cheesy Veggie Quesadilla Triangles recipe so I decided to give it a try. The nontraditional use of the veggie burger was a success. These were easy to assemble and perfect for entertaining, because you can assemble them beforehand. They work as an entree or as an appetizer and you can utilize sandwich picks!

Cheesy Veggie Quesadilla Triangles

Yield 4 Servings


2 veggie burgers, cut into 1/4 inch squares (552421)
1 cup salsa, divided (992296)
1/2 cup shredded cheddar cheese or monterey jack cheese (2 ounces) (774136/774209)
1/4 cup shredded pepper jack cheese (1 ounce) (774228)
2 teaspoons southwest or taco seasoning (CQT003)
10 (8-inch) flour tortillas (559357)
1 tablespoon butter, melted (880000)
2 1/2 cups shredded lettuce (optional)
2 tablespoons finely chopped red or green bell peppers
1/2 cup sour cream (HPH050)
sandwich picks (BD9101)



In medium bowl toss together vegetarian burger, 1/2 cup salsa, cheddar cheese, pepper jack cheese and seasoning.

Use pizza cutter to cut tortillas into 7-inch triangles. (Save trimmed edges to make homemade tortilla chips. Brush with olive oil and bake for 5 minutes.)

Place about 2 tablespoons burger mixture in center of each triangle. Fold corners of large triangles over filling, completely enclosing filling and making small triangles. Secure with toothpicks. Place on baking sheet, toothpick side up. Brush with butter. Bake at 375°F for 9 to 12 minutes or until beginning to brown on top.

Arrange on top of shredded lettuce. Sprinkle with bell pepper. Serve immediately with salsa and sour cream.

*Note: To thaw burgers, place in microwave and heat for 30 seconds.
