Recipe Thursday-Crock Pot Chicken Enchilada Soup

I enjoy a ritual that has begun with my friend, where we swap hosting dinner and whoever is not hosting brings wine!  I always know that I will enjoy whatever she makes. This past week it was Crock Pot Chicken Enchilada Soup. The recipe is simple, which is perfect for a weekday meal, and is very flavorful, a necessary requirement too! I will make this recipe again for two main reasons. Firstly, I love chicken enchilada anything, and  secondly I love crock pot dishes. Now I need to get my crock pot out and have some fun:)

Crock Pot Chicken Enchilada Soup

Yield 4 Servings
Ingredients
3 tablespoons butter (880000)
3 tablespoons flour (991867)
1/2 cup chicken broth (331101)
2 cups milk (HPH004)
15 ounces black beans, rinsed and drained (991645)
15 ounces diced tomatoes (990305)
8 ounces jalapeno sliced peppers (990174)
10 ounces diced green chiles
10 ounces frozen corn (559626)
1/2 cup onion, chopped (990195)
1/2 cup bell pepper, diced (559614)
10 ounces enchilada sauce
2 whole chicken breasts (332004)
1 cup shredded Monterrey Jack cheese (774209)
tortilla chips (991816)
guacamole (990378)

Method
Note: Soup can be prepped the day before by preparing the sauce storing it separately and then place the remaining ingredients, minus the frozen corn, in the crock pot and refrigerate overnight. When ready to make pour sauce over chicken, add corn, and turn your crock pot on.

Melt butter in a saucepan over medium-low heat. Stir in flour; keep stirring until smooth and bubbly. Remove from heat and add the chicken broth and 1/2 cup milk, a little at a time, stirring to keep smooth. Return to heat. Bring sauce to a gentle boil; cook, stirring constantly, until it thickens. In a large bowl, whisk together the enchilada sauce and chicken broth mixture . Gradually whisk in remaining milk until smooth. Set aside.

In a crockpot, combine drained beans, tomatoes, jalapenos, chiles, corn, onion, and bell pepper. Place the chicken breasts on top of the mixture. Pour sauce mixture over ingredients in cooker. Cover; cook on low heat for 6 to 8 hours or on high for 3 to 4 hours. When you are ready to serve, remove chicken and cut or shred into bite-sized pieces. Add chicken back into the soup, mix together. Top with cheese and guacamole and serve with tortilla chips. You can also top with fresh avocado and  sour cream, get creative.
