Recipe Thursday-Grilled Spicy Shrimp and Pineapple Skewers

Ever since I purchased my grill three weeks ago I have been grilling practically every meal, and entertaining often. I recently had some friends over to experience my newly furnished patio and grill. I made them Grilled Spicy Shrimp and Pineapple Skewers, since I could prep them beforehand. The kababs have a nice amount of heat, but it is not overbearing to the dish. My guest enjoyed them and therefore I will be entertaining with this dish again.

When entertaining I believe that it is beneficial to be able to prep as much of the food beforehand as possible, while not sacrificing the flavors. One very simple way to go about doing this are kababs, since they combine seasoned meats, veggies or fruit all on one stick. When grilling fresh meat a helpful tip is to cover a platter large enough to hold your meat with 2 to 3 layers of plastic wrap. Lay the uncooked meat on the platter, and when you transfer it to the grill, simply remove and discard the plastic wrap. You now have a clean platter on which to place the cooked meat when done. So all that I had to do when my guest arrived was heat up the grill and throw the shrimp on the barbie (this reference is for all those Dumb and Dumber fans) and I was ready to entertain seamlessly!

Grilled Spicy Shrimp and Pineapple Skewers

Yield 8 Kabobs
1 1/4  pounds shrimp (about 24 extra-large) (553314)
1/3  cup olive oil (992055)
1 1/2  tablespoons paprika (CQP010)
1  teaspoon red pepper flakes (CQP101)
1  teaspoon salt (991861)
1  large fresh pineapple
4  limes, quartered, for garnish

In a pitcher or tall pot, soak wooden skewers in water for several hours. This will minimize the burning. Stir together the oil, paprika, pepper flakes, and salt in a glass bowl. Add the shrimp and lightly toss until well coated. Quarter, core, and peel the pineapple or do what I did and buy a pineapple that is already cored and peeled. Cut each quarter wedge crosswise into 8 slices about 1 inch thick.

Run skewers through the shrimp and pineapple pieces, alternating one shrimp with one piece of pineapple. You will have 3 shrimp per skewer. As you work, the shrimp marinade will coat the pineapple, too.

Preheat the grill to medium. Using tongs, lay the skewers across the grill and grill until the shrimp turn pink and begin to curl, 2 to 3 minutes per side.

Transfer to platter as they are done and garnish with lime wedges.
