Recipe Thursday-Port-Glazed Walnuts with Gorgonzola

I was looking for a flavorful appetizer to serve at a dinner party, that I could prep ahead of time, and I came across this; Port-Glazed Walnuts with Gorgonzola. Delicious! I was able to make the port glazed walnuts and the sauce ahead of time so all that I had to do was let the cheese come to room temperature before my guests arrived. Encourage guests to take a cracker and stack it with a small cut off chunk of gorgonzala drizzled with a litte sauce and one walnut. The perfect bite! This dish could very easily be served as a dessert too and the walnuts would be perfect on a spinach salad.

Port-Glazed Walnuts with Gorgonzola

Port Glazed Walnuts with Stilton

Yield 12 Servings
Ingredients

2 1/2 cups walnut halves (9 ounces)
3/4 cup sugar (991842)
3/4 cup ruby port
1/2 teaspoon freshly ground pepper (CQP071)
1 bay leaf (CQB011)
One 1-pound wedge of Gorgonzola cheese (775809)

Method

Preheat the oven to 350°. Spread the walnuts on a rimmed baking sheet and toast for 8 minutes, or until lightly browned.

Meanwhile, in a large saucepan, combine the sugar, port, pepper and bay leaf and bring to a boil. Cook over moderate heat, stirring occasionally, until slightly thickened, 3 to 4 minutes. Discard the bay leaf.

Add the walnuts to the saucepan, stirring to evenly coat them. Using a slotted spoon, drain the nuts very well. Line a baking sheet with parchment paper and spread the walnuts on it in a single layer. Bake for 12 minutes, stirring once, or until the nuts are mostly dry; let cool. Separate any nuts that stick together.

Meanwhile, simmer the syrup over low heat until it is thick enough to coat the back of a spoon, about 3 minutes.

Set the Gorgonzola on a serving platter, drizzle with port syrup and place the walnuts, bowl of syrup and crackers on the side.

Make Ahead: The nuts can be stored in an airtight container for up to 2 weeks. The port syrup can be refrigerated for up to 1 week; rewarm before serving.
