Recipe Repost-Peanut Butter Eggs

Every Easter season I have a few activities that I look forward to; dying eggs with my family and friends and making Peanut Butter Eggs! Ever since I was little my mother and neighbor would get together to make Peanut Butter and Coconut Eggs and chocolate candy molds. This tradition is something that I treasure and take with me wherever I go, whether it’s Easter in Italy or California, these treats will be made and enjoyed! This recipe is super simple and I like it that way. I’ve tried different peanut butter egg recipes that have additional ingredients or cooking steps and they just don’t compare to this recipe. Hopefully you’ll agree with me. Since the batch makes a lot of eggs I recommend giving some away as hostess gifts!

Peanut Butter Eggs

Peanut Butter Eggs-2 (1 of 1)

Yield 4 Dozen
Ingredients
1 pound salted butter (880025)
1 pound (2 cups) peanut butter (991611)
1 tablespoon vanilla (NFC1055)
2 pound powdered sugar (NSU2450)
2 pound semi sweet chocolate chips** (NCC1412)
1/4 cup vegetable oil (992065)
pan liners (BD3061)

METHOD
In a large bowl mix together softened butter, peanut butter and vanilla and then add powdered sugar.

Line pans. Shape mixture into eggs and refrigerate until eggs are firm.

Melt chocolate for dipping. I prefer using a double boiler rather than the microwave. Heat the chips and oil (2 cups per batch and 1 1/2 teaspoons oil) over low heat, stir occasionally, until they are melted. Coat the eggs in chocolate and place back onto paper lined pans. Refrigerate and enjoy!

Make sure not to let any leftover chocolate go to waste! This year I made chocolate dipped Shuey’s Pretzels! **Any type of chocolate can be used, but I prefer semi-sweet.

This recipe was indeed simple to make and flavorful. Biting into the wrap was like taking a bite of pizza. It was delicious and rich. It reminded me of stromboli, but without the additional dough. I altered the recipe slightly to fit my tastebuds, so make sure to have fun with what you fill your wrap with. I also chose to press the wrap to give the outside that crispness and to heat the entire wrap through! Sauteing the mushrooms and onions in oil

Sauteed Mushrooms and Onions_Hometown Provisions

Yield 14 Servings
Ingredients

1 tablespoon vegetable oil (992065)
2 onions, yellow, thinly sliced
10 ounces mushrooms, fresh, sliced
1 1/2 pounds Hormel pork topping (553154)
1/2 pound Hormel sliced pepperoni, cut in half (440039)
2/3 cup pitted kalamata olives, halved (990403)
3 cups pizza sauce (993305)
3 cups part skim mozzarella cheese, shredded (775557)
12-12″ flour tortillas (TU72491)

Method
In large skillet heat oil and sauté onion and mushrooms for 8 minutes or until soft. Stir in sausage, pepperoni, olives, and pizza sauce. Stir in shredded cheese. Divide mixture evenly among each tortilla. Place one tortilla on a flat cutting board and place 1/2 cup mixture in center of tortilla. Fold both sides of tortilla in 1/4 of the way and fold bottom and top of tortilla in 1/2 way, similar to a burrito. Flip entire tortilla over-seam side down. Repeat with remaining tortillas untill all of the filling mixture is used. Heat panini press or grill to high. Cook wraps on panini press until grill marks are visible and filling is sufficiently warmed through. Remove from press and cut in half on bias and serve.
