Memorial Day Delivery Schedule

Memorial Day is practically around the corner so we want to make sure that our customers know when to expect their deliveries for this holiday week. We will be closed on Monday, May 27, for Memorial Day.

Lebanon Customers: If you normally get a delivery on Monday it will be pushed back to your other delivery day of either Wednesday or Thursday.  

Non-Lebanon Customers: If you normally get a delivery on Monday it will be pushed back to Tuesday.  

**Please make sure to have your special order items in the week prior.**

Recipe Thursday-Quiche Lorraine a la Dried Beef

Quiche Lorraine a la Dried Beef

I had a nice half piece of Knauss dried beef sitting in my fridge, I realize this is probably not something you hear everyday, so I wanted to try and get creative with a recipe, and not make the traditional creamed chipped beef. I planned to take this dish as dinner for a friend who just had a baby and is trying to get back to her pre-pregnancy weight. Therefore, I did not want to bring a heavier dish, creamed chipped beef, which is the only recipe I have ever made with dried beef. So with a little recipe searching I created Quiche Lorraine a la Dried Beef. It turned out delicious and the dried beef did a good job of turning the dish into a dinner entree, rather than a traditional breakfast dish, though it would be perfect for any given meal. Serve warm or cold with a spring lettuce mix drizzled with a light balsamic vinaigrette!

Yield 4-6 Servings
Ingredients
1 pie shell, frozen (559326)
1/2 cup onion, chopped (05779)
1 teaspoon olive oil (992059)
4 ounces Knauss Dried Beef, diced (KNS2002)
1 cup asiago, shredded (775627)
4 eggs (EGG014)
2 cups whole milk (HPH004)
1/2 teaspoon pepper (CQP064)
1/4 teaspoon salt (991862)
1/4 teaspoon dried thyme (CQT041) or 1 teaspoon fresh thyme (01068), chopped

Method
Preheat oven to 375 degrees. Precook pie shell 5-7 minutes, with pie weights. This will ensure that the crust is properly cooked through once the custard mixture is added. While crust is baking heat 1 teaspoon olive oil over medium heat and saute onions until soft, about 5 minutes.

Whisk eggs, milk and spices together in separate bowl. Once crust is pre-baked remove from oven. Place onions, dried beef and cheese in bottom of crust, reserve a few dried beef cubes for on top of the quiche. Place pie pan in oven, on middle rack, and pour egg mixture in until it is about 1/4 inch from the top of the crust, top with remaining dried beef cubes. Bake for 40-50 minutes and let cool 15-20 minutes before serving.
