Recipe Thursday-Hippey Peach Salsa Frank

Though I have boasted that Hippey Franks do not require any fancy toppings every once in a while it is fun to get creative! Since peaches are in season I decided to “freshen” up my franks by making a  Hippey Peach Salsa Frank. A few other frank toppers that caught my eye are a Pineapple Bacon RelishCubano, Guacamole or Tahini Frank.

Hippey Peach Salsa Frank

Hippey Frank with Salsa

Yield-4 Servings
2 peaches, chopped (00764)
1/2 to 1 jalapeño pepper, chopped (00814)
1/4 cup fresh cilantro leaves (05329)
1 tablespoon fresh lemon juice (00543)
kosher salt and black pepper (CQS030)
4 Hippey Franks (dvm402)
4 hot dog buns, split (559496)

In a medium bowl, mix together the peaches, jalapeño, cilantro, and lemon juice; season with 1/8 teaspoon each salt and black pepper. Let sit for 15 to 20 minutes. Grill Hippey Franks until desired darkness. Place one on each bun and, dividing evenly, top with the peach salsa.

Recipe Thursday-Bruschetta with Olive Rosemary Tapenade

When my friend asked me to provide a few appetizers for a group gathering I was instantly excited, because it meant that I could recipe hunt and find some new recipes to make! I developed my own recipe-Bruschetta with Olive Rosemary Tapenade using Isabelle’s Olive Fest Salad as the base ingredient. The dish had a nice citrus note from orange zest and fresh herbs from my herb garden! Also, the bruschetta held up nicely throughout the whole evening without getting soggy from being pre-assembled.

Yield 6 Servings
1 1/2 cups Isabelle’s Olive Fest, chopped (whole black olives, Kalamata olives and stuffed green olives with peppers
and fresh vegetables in a special Italian dressing.) (IS4400B)
1 garlic clove, finely chopped (03016)
1 tablespoon finely chopped flat-leaf parsley leaves (00748)
1 teaspoon finely chopped fresh rosemary leaves (05326)
½ jalapeño pepper, seeded and minced (00814)
Zest of ½ orange (00716)
2 tablespoons extra-virgin olive oil, divided (992055)
Juice of ½ lemon (00531)
1 cup Maggio whole milk ricotta (HPH203)
1 large baguette, thinly sliced on the bias and toasted (559383)

Slice baguette and brush olive oil on each slice. Broil for 2-4 minutes until lightly toasted.

In a medium bowl, combine the olive fest, garlic, parsley, rosemary, jalapeño and orange zest. Add 1 tablespoon of olive oil and the lemon juice, then stir until just combined.

Mix ricotta with 1 tablespoon of olive oil. Spread one tablespoon of ricotta mixture and 1 heaping tablespoon of the tapenade onto each slice of toasted bread. Arrange the bruschetta on a serving platter and serve immediately.
