Bright Harvest Prime Center Cut Sweet Potatoes

Product Description
Garden Harvest Sweet Potatoes are blanched, and fresh frozen with excellent taste that can’t be matched by canned. They are cut straight from the heart of the sweet potato, are a great tasting alternative to white potatoes, and are a rich natural source of beta carotene. Use them as a stand-alone side dish or as a component in your own signature sweet potato dish.

Preparation Instructions (from frozen)

  • Boiled – Bring water to a rolling boil. Add frozen sweet potatoes.
  • Boil for 15 minutes, or until tender, stirring gently. Drain immediately.
  • Baked – Preheat oven to 350ºF. Place frozen sweet potatoes in baking pan. Add 1/4” water to bottom of pan. Cover with foil and bake for 50-60 minutes.
  • Mashed – Prepare boiled sweet potatoes as described above. Mash potatoes and add butter, milk, brown sugar and salt. Whip potatoes until soft and creamy.
  • Variations: Preheat oven to 350ºF. Place frozen sweet potatoes in baking pan and:
    • Add salt, brown sugar, lemon juice, water to 1/4″ depth and dot with butter; or,
    • Prepare sauce (4 parts water, 1 part sugar, 1 part butter) and pour over sweet potatoes to 1/4″ depth. Cover and bake 50-60 minutes.

Recipe Thursday-Sweet Potato and Black Bean Chili

Here is a low sodium, low fat, heart healthy Sweet Potato and Black Bean Chili! This dish draws a lot of flavor from the smoky ground chipotle chile and fresh cilantro. It is filling from the protein in the black beans and gives you energy from the sweet potatoes (complex carbohydrates). Serve with tortilla chips or cornbread and coleslaw.

Sweet Potato and Black Bean Chili

Sweet Potato and Black Bean Chili

Yield:  4 Servings
Ingredients
1 tablespoon plus 2 teaspoons extra-virgin olive oil (992059, 4/3LTR)
1 medium-large sweet potato/yam, peeled and diced (I used yams-05299, 70-80CT) On special this month!
1 jumbo yellow onion, diced (00691, 50#) On special this month!
4 cloves garlic, minced (03016, 5#)
2 tablespoons chili powder (CQC041, QT)
4 teaspoons ground cumin (CQC094, QT)
1/2 teaspoon ground chipotle chile (see Cooking Tips) (CQC049, QT)
1/4 teaspoon salt (991862, 50#)
2 1/2 cups water
30-ounces black beans, rinsed (991645, #10CAN)
14-ounces diced tomatoes (993309, 102OZ POUCH)
4 teaspoons lime juice (990333, 32OZ)
1/2 cup chopped fresh cilantro (05329, 1#)

Method
Heat oil in a Dutch oven over medium-high heat. Add sweet potato and onion and cook, stirring often, until the onion is beginning to soften, about 4 minutes. Add garlic, chili powder, cumin, chipotle and salt and cook, stirring constantly, for 30 seconds. Add water and bring to a simmer. Cover, reduce heat to maintain a gentle simmer and cook until the sweet potato is tender, 10 to 12 minutes.

Add beans, tomatoes and lime juice; increase heat to high and return to a simmer, stirring often. Reduce heat and simmer until slightly reduced, about 5 minutes. Remove from heat and stir in cilantro.

Cook’s Tip
Chipotle peppers are dried, smoked jalapeño peppers. Ground chipotle chile pepper can be found in the spice section of most supermarkets or online at penzeys.com.

To Make Ahead
Cover and refrigerate for up to 3 days or freeze for up to 3 months.
