What is Dried Beef and Creamed Chipped Beef?

Dried Beef is a slowly cured, lean beef which is trimmed of most fat to attain ultimate leanness. It’s mildly salty, yet beefy and smoky flavor profile has lent itself well to many recipe applications over the last 100 plus years…but undoubtedly, the best recipe marriage with dried beef is just a little milk, flour and butter to create the classic “Creamed Chipped Beef” recipe which first appeared in the manual for Army Cooks in 1910.

Memorial Day Delivery Announcement

Dear Hometown Provisions’s Customers,

We will be closed on Monday, May 26th for Memorial Day.  If you normally get a delivery on Monday it will be pushed back to Tuesday. Unless, if you are a Lebanon area customer your delivery day will be pushed back to your other delivery day of either Wednesday or Thursday.  Please make sure to have your special order items in the week prior and produce orders need to be placed by Friday at 3pm.

Recipe Thursday-Bangers and Mash

I have never made Bangers and Mash, but do enjoy ordering this dish when I go out to an English or Irish Pub. Although I have been known to be critical of this dish in the past, mostly because the bangers are more like Italian sausages or the gravy is too sweet. So I decided I would attempt to make my own! This recipe did a nice job balancing all the flavors out and the gravy did not overwhelm the mashed potatoes or bangers. My gravy was a bit lighter than the original recipe since I used Ravens’ Special Lager, instead of Guinness. So feel free to use whatever beer style you prefer. Also, one mash addition that I particularly liked were the sauteed chives. Delicious!

Bangers and Mash

Bangers and Mash (1 of 1)


Yield 3 Servings
1 pound of Irish banger sausages (bratwurst would be a good substitute) (333021, 10#, Warrington Farms)
1/4 cup of beer of your choice
olive oil for cooking (992055, 3LTR)

2 pounds red potatoes, cut into chunks (00885, 50#)
4 scallions, finely chopped (01013, 3CT)
2 tablespoons of unsalted butter (880030, 1#-solid)
1/4 cup of buttermilk (HPH001, QT, Axelrod)
2 tablespoons of skim milk (1/8 cup) (HPH008, 1/2GAL, Crowley)
salt and pepper to season (991862, 50#/CQP084, QT)

1 tablespoon of unsalted butter (880030, 1#-solid)
1 large onion, sliced (00691, 50#)
1/2 cup of beer of your choice
14.5 ounces of beef broth (331102, 12/48OZ, College Inn)
1 tablespoon of Worcestershire sauce (991668, GAL, Castella)
1 1/2 teaspoons of cornstarch (991869, 24/1#)
1/4 cup of water

Italian parsley (00754, 6CT)

Place sausages in a large skillet over medium heat. Pour 1/4 cup of beer into the  skillet along with a drizzle of olive oil. Cover, leaving the lid slightly ajar. Cook until beer evaporates. Slowly cook each side of the sausages until brown and crisp and the
center is no longer pink.

To make the mash, place potatoes in medium sauce pan and cover the potatoes with water. Cook over medium high to high heat. When the water comes to a boil, season with salt. Let it cook until potatoes are fork tender, about 25-30 minutes. Meanwhile, cook scallions over medium heat with a little bit of olive oil until very slightly brown, about 3-4 minutes. Drain potatoes and add butter, buttermilk, milk, cooked scallions, salt and pepper. Mash until desired consistency.  Check for seasoning.

For the gravy, melt butter in a large skillet over medium high heat. Add onion and cook until soften. Pour beer, scrape the bottom of the pan and let it reduce, about 1 minute. Then add beef broth and Worcestershire sauce. Mix corn starch and cold water together and pour into the skillet, while whisking. Cook over medium high heat until reduced to desired thickness.

Serve mash on a plate then place bangers on the mash and pour the gravy on top. Optional: garnish with chopped fresh Italian parsley.
