Recipe Thursday-Fish Tacos with Fresh Mango Salsa

With Cinco de Mayo around the corner here is a delicious Fish Taco with Fresh Mango Salsa recipe for you to make! For me nothing says fiesta like a fish taco with soft tortillas and fresh salsa! Happy Cinco de Mayo!

Fish Tacos

Fish Tacos (1 of 1)

Yield 6-8 Tacos
Ingredients
1 pound flounder (553325, 40/4oz), tilapia (553319, 10#/5-7oz) or cod (553292, 22/7oz) fillets
2 tablespoons juice from fresh limes (00588, 12CT)
2 tablespoons olive oil (992055, 3LTR)
1/2 teaspoon Sazon seasoning (940500, 18/3.5oz, Goya)

Cilantro Lime Rice
4 cups water
2 cups white rice (991589, 25#)
1/2 cup cilantro, chopped (05329, 1#)
juice from 1 lime (00588, 12CT)

Salsa
1 mango, diced
1/2 cup red onion, chopped (00683, 5#)
1/2 jalapeno, seed removed and finely diced (00814, 10#)
1 tablespoon olive oil (992055, 3LTR)
1/4 cup cilantro, chopped (05329, 1#)
juice from 1 lime (00588, 12CT)

Flour tortillas (559357, 8″/12DOZ, Abuelita)
Corn tortillas (559553, 6″ 12/60CT, Mission)

Method
In a small bowl, whisk together lime juice, oil and Sazon. Pour over fish (tilapia was used this time) in a ziploc bag and marinate in fridge for an hour or so. Remove and drain from marinade. Prepare fish on the grill, under the broiler or sauteed in a smidge of oil until done.

In a medium saucepan, bring 4 cups of water to boil. Add rice,cilantro and lime juice stir with a fork to ensure rice is level and covered in water. Cover and reduce heat to low and allow to simmer for about 20 minutes until most of the water has evaporated.

In medium bowl, combine mango, red onion, jalapeno, olive oil, cilantro and lime juice.

Mango Salsa (1 of 1)

Serve fish with flour or corn tortillas with mango salsa and rice on the side. Enjoy!
