Yum! I took one of my favorite summer camp recipes and reinvented it! I used our top selling GariMark Chicken Tender with some homemade ranch dressing, made from Oasis Foods’s Extra Heavy Mayonnaise, fresh avocado, tomatoes and red onion to make a wrap. The crisp of the chicken tender was a welcomed texture addition for this fresh light dinner.

Yield 4 Servings
6 GariMark chicken tenders (553071, 1/10#)
1/4 cup medium red onion, sliced (04599, 25#)
1 cup cherry tomatoes, halved (01081, 12/PT)
2 avocados, sliced (01159, 12CT)
4-12″ flour tortillas (TU72491, 6/12CT, Tumaro)

Ranch Dressing
1/4 cup sour cream (HPH050, 5#, Crowley)
2 tablespoons Oasis mayonnaise (992154, 4/1GAL)
1/4 cup buttermilk (HPH001, 12/QT, Axelrod)
1 tablespoon parsley, minced (00753, 12CT)
2 tablespoons red onion, minced (04599, 25#)
1/4 teaspoon garlic powder (CQG028, QT)
1/4 teaspoon salt (991862, 50#)
1/8 teaspoon pepper (CQP084, QT)

Heat oven to 400 degrees. Bake chicken tender from frozen for 25 minutes total. At 15 minutes brush on ranch dressing and finish baking. When finished slice into strips.

To make ranch dressing mix all ingredients together and refrigerate leftovers.

To assemble heat each tortilla on medium high skillet for about 45 seconds per side. Lay 1/4 of the chicken strips, cherry tomatoes and red onion in tortilla, drizzle with ranch and season with salt and pepper. Wrap and serve.
