Handy Gluten Free Crab & Shrimp Risotto Cake

Preparation and Cooking: Baking – BAKE – Preheat oven to 350F. Spray or coat pan with oil. Place pan on rack in middle of oven. Turn cakes over once during cooking. For convection ovens, reduce cooking time by approximately 1/3. 12-14 minutes from thawed 21-23 minutes from frozen. PAN FRY – Cook in 2 tbsp. of oil on medium-high heat. Turn cakes over once during cooking. 4-6 minutes from thawed. Cooking from frozen not recommended. BROIL – Spray or coat pan with oil. Place pan on rack in middle of oven. Turn cakes over once during cooking. 10-11 minutes from thawed. Cooking from frozen not recommended. If thawing cakes, thaw under refrigeration or in microwave for 45 seconds on high.
Serving Suggestions: Appetizers – (one cake) with a micro-green salad, or small arugula salad, with a lemon-basil aioli. Dinner – (two cakes) with grilled vegetables, such as asparagus, a quinoa salad or any gluten-free pasta. Can also be part of a surf n turf, served with a small steak or as part of a gluten-free fisherman’s platter with grilled shrimp and scallops.
Storage: Keep frozen
